Gambas en salsa de ajo are shrimp in delicious garlic sauce. This specialty is also offered in tapas bars. Again, there are different variants of preparation.
They are served warm immediately after cooking. Shrimp are very popular in Spain. They are available in nearly all supermarkets fresh and in different sizes to buy.
A very special kind, there is in the area of Denia (Costa Blanca). Here you can find the Gambas Rojas de Denia at certain seasons. This particular species is traded up to 100 € per kilo.

2 cloves of garlic
16 big shrimps
50 ml white wine
1 tbsp parsley

The preparation
Wash the shrimp in a colander, drain and set aside. Peel and slice the garlic, mince the parsley. Put the olive oil in a large pan and heat. Then add the garlic slices, the parsley and sprinkle with salt and fry for about 2 – 3 minutes over half a flame.
Then add the shrimp with shell and head and fry on each side for about 2-3 minutes. Then add the white wine and simmer for about 1 minute, done!
Serve immediately with a little lemon and a piece of white bread. Adjust seasonings to your liking and delight.
