Gazpacho Andaluz

Probably one of the best known specialties in the Mediterranean is the Gazpacho Andaluz. The Gazpacho Andaluz is a vegetable soup that is served cold. Especially on hot summer days a pleasure. Their fresh and fruity taste makes them so special.

There are a number of cold soup dishes in Spain, but the Gazpacho Andaluz is certainly the classic.

It origin comes as the name says from Andalucia in the south of Spain. There are some variations of the preparation.

The Gazpacho Andaluz is also suitable for vegetarians and vegane people, since all ingredients are vegetable.

Ingredients

1 kg of tomatoes
1 red pepper
1 cucumber
8 tablespoons soft flavoured olive oil
1 clove of garlic
1/2 baguette bread
Wine or cherry vinegar
Salt

Preparation: approx. 20 minutes + 1 hour cooling time

The preparation

Slice the bread and soak in lukewarm water. In the meantime, wash and peel the tomatoes (if they are too soft to peel with a potato peeler or small knife, put briefly in hot water, then quench under cold water, the peel is easier to peel off). Wash the peppers, core them and cut into large cubes. Also wash and peel the cucumber and cut into slices or cubes. Peel and dice the garlic.

Put the soaked bread in a colander and express well. Put everything in a blender except for the salt and the vinegar, close and purée for about 1 minute. Add salt and vinegar to taste. (The amount of salt and vinegar depends on the tomatoes, whether they are sweet or sour). Mash everything again for at least 1 minute until the soup has a nice creamy consistency.

Then refrigerate for at least 1 hour. In the meantime, we can prepare the garnish. We use vegetables such as green or red pepper, spring onions or normal onions, carrots, cucumber and bread cubes roasted in olive oil or butter. Simply cut the vegetables into small cubes.

After the cooling time, put the gazpacho in plates and decorate with the fresh and crisp vegetables and bread cubes. You can also, if you have guests, put the vegetables and bread cubes on a separate plate, so everyone can take what they like. Finished !

TIP: You can also use a blender or a hand mixer instead of a food prossesor.
